Chicken Noodles

This is one of Emma's favorites and something I made up and so simple, I'm almost ashamed to put it up here...

I buy a rotisserie chicken to use to make this, but you can also buy a whole chicken and boil it, if you'd prefer...

1 Rotisserie Chicken
2 Boxes of Chicken Stock, plus 2 extra cans
Large bag of egg noodles
Can of Cream of Celery soup

Put all the liquid/soup in a pot, bring to a boil. Add noodles, tear the chicken off the bone, throw it in.. Add salt and pepper to taste and WA-LA... it's done and it's soooooooooooooo yummy!

Peanut Butter Delights

As you can see, this picture was taken Christmas eve, because these are what Emma (and Noah) made and left for Santa to eat.

Ingredients:
2 C Sugar
3 T Cocoa
1 stick butter
1/2 C milk
pinch salt
1/2 C Peanut Butter
2 C Quick Cooking Oats
1 tsp vanilla

Mix sugar, cocoa, butter, milk, and salt in saucepan. Place over medium heat and bring to a hard boil. Boil 3 minutes.

Remove from heat. Add Peanut butter, oats, and vanilla. Blend well.

Drop on waxed paper by spoonful on waxed paper and let cool!

Banana Pudding

This is the best banana pudding I've ever had! Seriously!

Ingredients:
1 Large Pkg. Vanilla Instant Pudding
8 oz. Sour Cream
1 Large Container Cool Whip
1 Box Nilla Wafers
Approx. 6 Bananas (sliced)
Prepare pudding according to directions on the box.
After it sets, mix in the cool whip and sour cream (this makes your filling)
In a 9x13 pan, you're going to do layers. First, Nilla wafers, then bananas, then filling. Do another layer and top it off with the left-over nilla wafers crushed and sprinkled on top.

Chili

I'm going to get this ball rolling with the two things that I've cooked so far this week. They are both super easy and very, very yummy, if I must say so myself!

The first is my chili recipe...

Ingredients:
1 1/2 lbs. hamburger
2 Green Bell Peppers (diced)
2 Large Onions (diced)
2 (14.5 oz.) cans Diced Tomatoes
2 (8oz.) cans Tomato Sauce
4 tsp. Chili Powder
1 tsp. Basil
1/2 tsp. Black Pepper
4 Cloves Garlic
1 (15 oz.) can Kidney Beans ( I use the light red ones)
Cook together hamburger, onion, green pepper, and garlic until hamburger is brown and vegetables are tender. Drain.
Stir in all the canned goods and the spices.
Bring to a boil.
Reduce heat and simmer for approx. 20 min.
We serve this with shredded cheese, sour cream, and garlic bread.
* You can also put this together the same way and let it simmer in the crock-pot until you're ready to serve it!
